Throw Back Thursday: NY Trip April 2012 vol. 1

 We drove 3 days from Nebraska to Upstate NY.  They boys handled the trip amazingly well.  This particular night at dinner was a total disaster though.  The service was bad, and by the time our food finally arrived Oliver was in the middle of a total meltdown.

 Oliver absolutely adored my Dad! It was super cute.  I love this picture too, Oliver snuggled with my Dad and quickly fell asleep.  It's pretty rare that he does that.

This was our second trip to NY since the boys were born, they are 15 months here.  I took almost a month off of work and we spent 3 weeks road tripping and visiting my family in NY.  It was a fantastic trip.  It was wonderful to be able to spend so much time there, we miss them a lot!

Wordless Wednesday: Owynn

Owynn had a lot of fun playing with my headband.  Shortly after, I heard him in the kitchen messing with the trash barrel.  When he came running out I asked him where he put my headband. He pointed and said "my butt!"  Oh man, he is something else.  He was such a sweet, calm, happy baby, I don't know what happened.  He's always the one getting into things he's not supposed to and trying to push his boundaries.

BBQ Meatloaf

I love meatloaf, but John is really not a fan.  It took me several years to find a recipe that we both liked, but I finally did!  It's not exactly the most healthy meal on the planet, but everyone, including the boys, likes it.  You can find the original recipe here, I do make it just a little bit differently.

Ingredients:
2lbs Ground Beef
3 Eggs
1 Onion chopped (I use frozen diced and add to taste.)
1 C yummy BBQ Sauce
3/4 - 1C Bread Crumbs
1 C Crushed Potato Chips
3/4 tsp Liquid Smoke
3/4 tsp Ground Black Pepper
1 tsp Salt (I use sea salt)
1/2 tsp Garlic Powder (I use the refrigerated minced kind to taste.)  
1 Pinch Cayenne Pepper
Bacon bits to taste (I cook fresh bacon, crumble it, and add about half of the package.)


some of the ingredients, and yes that is a half gallon jug of BBQ sauce...don't judge!

Preheat oven to 375 degrees.
In a large bowl combine all the ingredients.
On a greased pan or cookie sheet, shape mixture into a loaf shape.
Bake for about 45 minutes to an hour, or until meat is cooked through.
Enjoy!

I Just Saved A Bundle by Switching My Car Insurance!

No, really, I did!  Last week I finally made a bunch of phone calls and scheduled a few appointments that I had been meaning to get to, but just never really made the time.  I am so glad I did!  One of the things on my list was calling to get a new car insurance quote.  We had been with Progressive, but were paying more than I thought was necessary for renters insurance.  So last Wednesday I finally called another company to get a quote.  The lady I spoke with was awesome, she was super nice and helpful.  I was on the phone for probably like a half an hour and she went over everything with me, explaining things, and answering all my questions.  I was able to switch my plan and we are saving over $50 a month.  I was very surprised we were able to save so much, I spent the day doing a happy dance.

I had written a post awhile ago talking about how I was thinking about paying for 6 months of my insurance with Progressive.  When I looked into it, we would have saved about $50 over the course of 6 months.  I decided not to, part of which is because I am a wimp and have a hard time spending any sort of large sum of money.  And now I am very glad I didn't.  It's funny how things work out sometimes.
